No-churn ice cream

I almost asked for an ice cream attachment for my KitchenAid stand mixer as a birthday gift this year. Then I remembered where I live and how much room I don’t have. This also may be a good time to share that I don’t have a toaster or a blender either (small apartment probz).

So it felt like fate when I saw Bon Appetit share several no churn ice cream recipes and I needed to take action. Each base recipe is the same and includes 2 cups heavy cream that get fully whipped, a 14 ounce can of sweetened condensed milk and 1 TSP kosher salt. You could really run with this in any direction you like if you follow that.

Bentley’s way

  • I skipped the toasted black sesame seeds altogether. I’m sure this is delicious, but I really like my ice cream classic and home-style rather than gourmet.

  • In lieu of this, I added 2 TSP vanilla extract to the condensed milk with the kosher salt.

  • Next time, I’m adding more cookies. I crushed and added 12, but would love even more cookie action.

  • It really does need a long time to freeze so be better than me and plan ahead! Or sneak bites while you’re “checking on it.”

  • You could absolutely use a hand mixer if you don’t have a stand mixer. You’re just making unsweetened whipped cream!
