Fancy Chicken Parm

As we’ve discussed before, there will always be times when you need to cut corners with recipes for your own sanity and/or to preserve time. You should always do this when you need or want to, which is why I shared this Casual Chicken Parm recipe awhile back — it totally hits the spot when you’re craving the dish, is achievable for any occasion and it’s also great for two people.

However, if you find yourself wanting to spend some extra time on dinner or are cooking for a crowd, this recipe is worth the trouble. There are some extra steps here that you may think aren’t necessary — like the lemon, garlic, olive oil marinade or the homemade marinara — but both make a difference.

Notes for the chef:

  • If you’re hosting people or just want to make a nice spread for yourself, Ina Garten’s Roasted Shrimp Cocktail is a perfect appetizer. It doesn’t compete or clash with the main event and it’s also easy. This is one of my Mom’s go-tos, and we know by now that she knows best.

  • This Italian salad is also a fantastic complement to the chicken, too — it’s bright and tangy and crunchy.

  • And finally, a controversial note about serving pasta with chicken parm. I know this is standard to do and definitely makes sense, but with how much is going on with the chicken, I find it unnecessary and may start going without.
