Creamy Lemon Pasta

I’m a true Foods of Jane fan girl. She has awesome recipes, is from Ohio and went to the same college as me, so yeah. She’s also a fellow noodle buff and has delicious pasta recipes. Also, any time I’ve messaged her with a question or compliment or tagged her, she has responded. Definitely check out her site and Instagram.

One that I keep going back to is her creamy lemon pasta - it’s basically Alfredo sauce with lemon which really makes it incredible. I recommend using fresh pasta even if you buy it because it’s just better. If your grocery store isn’t making this, Buitoni is doing great things in this realm. My package of pasta was 9 oz. instead of 6 like the recipe says and this worked just fine. If you like it saucy, double that if you’re doing more pasta.

I tend to serve pasta with salad even though John has gone on the record complaining about how boring my salads are. I don’t get carried away here, by this time I’ve already made dinner so this extra for our health.

Simple Green Salad Forumla

  • Lettuce - Always use your favorite when you’re eating something. My go-to lettuce happens to be a blend of Arugula and Spinach or Spring Mix.

  • Dressing - Ina’s Best Vinaigrette is wonderful and easy if you want to make an official dressing. However, I really love olive oil, red wine vinegar, kosher salt, black pepper, garlic powder and dried oregano.

  • Cheese - Optional, but like, come on. Grated parm is beautiful on salad, especially when eaten with paste.

  • Overachievements - Onions, carrots, cucumbers, olives, etc. are all great, but like, I’m not cutting that up just for a salad.
