Insane grilled cheese

I’m here to tell you that grilled cheese can absolutely be a valid meal when you’re an adult — in fact, it may even be a more worthy meal for adults than children. Whether you’re committed to using Wonder Bread and Kraft Singles, or you’re open to elevation, it’s just a beautiful sandwich.

I personally enjoy when I can also have some tomato soup on the side for dipping and eating, which is why I lean classic in my topping preferences.

However, Molly Baz has an insane variation that teeters the line between classic and modern. She uses a combination of cheddar and American, thicker country-style bread slices lathered in mayo, then adds a charred scallion and pickled jalapeno relish in the middle and offers a spicy mustard dipping sauce. It’s truly incredible and worth the decadence.

Honestly, you could easily focus on the bread and cheese here and still be very happy. The point of me sharing this is that her guidance on the bread thickness, amount of cheese and cooking temp/time is very helpful if you’re not yet a pro at making this delicacy.

Also, please try using mayo instead of butter on the outside of the bread. I promise it’s not weird and browns A LOT better. And, if you’re interested in pairing with tomato soup, definitely keep it simple — I liked this recipe that my Mom shared with me.
