You can always add more

As much as I love meat, I really do enjoy meatless recipes. Part of this is because I like to rotate the food we eat each day, but it’s also because meatless recipes tend to offer something different because they aren’t relying on meat. In this case, it was a beautiful mixture of unexpected textures from the charred brussels, to the chewy noodles and the crunchy peanuts. Needless to say, I was hooked.

While I really enjoyed this recipe, I must have cooked my noodles too much or too little (oddly sticky?). I also found that adding the full amount of sauce was too much (and I’m a self-proclaimed sauce person). When I make this again and if you decide to try it out, proceed with caution here and remember the cardinal rule for life: You can always add more, but you can’t take any away once it’s been added.
