Actual Fried Eggs

I’m here to take a strong stance as it relates to types of cooked eggs. While I believe all fried eggs should also have runny yolks, not all runny-yoked eggs are fried eggs (it’s like that squares are rectangles, but rectangles aren’t squares argument).

The fried piece comes into play because you cook the eggs in a really hot pan with olive oil, and cook them until the edges are brown and crispy - so much so, that you need a knife to help you cut through when you’re eating. You baste the white part with hot oil to get it cooked, which I love.

I enjoy making these eggs, but it’s critical they’re served with some kind of buttered toast so you can soak up the yolk - I pan fry toast in a cast iron skillet because we don’t own a toaster. And obviously, having bacon or sausage brings it all home.
