Ashley’s Jam Thumbprint Cookies

My dear friend Ashley makes these delicious cookies every holiday season. They are simple, buttery but tart, and more importantly melt in your mouth. I find them to feel both festive and a delightful change from my chocolate cookie propensity.

While you could use whatever jam you like, Ashley is partial to not only raspberry — but also the classic Bonne Maman brand. And I agree.

This year, we made them together. And while her spirit is more free in the kitchen than mine, I like to think we balance each other out and work well together.

Raspberry Thumbprint Cookies

Some things to keep in mind:

  • Depending on your use, doubling the batch is easy to do and wise so you have plenty to enjoy and share.

  • Contrary to popular belief, this can be mixed by hand.

  • Whatever you do, don’t overbake these. You’re looking for lightly golden.

  • Based on the above, move them from the pan to a cooling rack as soon as they’re done so they can set. Be careful here, they will be soft.
