Weekend pancakes and bacon

As I’ve said before, I don’t eat breakfast most days, but I really do love making and eating breakfast food on the weekends. This generally looks like some type of eggs, but occasionally I get a hankering for something sweet, like blueberry pancakes.

If I’m making pancakes, I exclusively use BA’s Best Buttermilk Pancakes recipe, this time with added fresh blueberries and served with skillet bacon.

I follow the recipe exactly because it really is the best, with the exception of adding 1 TSP vanilla extract and occasionally, blueberries. These are fluffy with a perfectly browned and crispy exterior. I have a griddle where I can make a few at a time, but actually prefer making these one by one in my nonstick skillet because I’m a masochist. The only change I had to make this time was using butter instead of oil in the pan, simply because I am out of oil and I forgot.
