Spicy Turkey ‘Wiches
Since we’ve been making home at lunch more these days, I’m trying to get creative with what this looks like. Obviously I’ve made it clear that I love a good sandwich, so this should feel on-brand already.
I’ll go on the record saying this is unique and delicious. The sweetness and softness of the brioche bread really is delicious with the spicy, smoky accompaniments.
Spicy Turkey ‘Wiches
Serves 2
4 slices brioche bread
1/4 pound Boar’s Head blackened turkey, sliced thin
4 slices cheddar cheese
Roma tomato, thinly sliced (2-3 per sandwich)
2 romaine lettuce leaves
Red onion, thinly slices
1 cup mayo
1 TBS hot sauce (like Frank’s or Crystal)
1 garlic clove, minced/crushed/grated
1 lime
1/2 TSP chili powder
1/4 TSP cayenne pepper
How to make it
Heat a cast iron skillet over medium. Spread a thin layer of mayo on one side of each piece of bread and place in pan when ready. Toast this for 5 minutes, or until beautifully golden brown all over. We talked about this already, mayo toasts better.
Make the spicy mayo by combining the mayo, hot sauce, garlic, juice from one lime, chili powder, cayenne pepper. Season with kosher salt and freshly ground black pepper to taste.
Lather each slice of toasted bread with the spicy mayo on the non-toasted side. Layer one side of each sandwich with the turkey, two slices of cheese, tomato and red onion slices. Top with a romaine lettuce leaf and cap with your other piece of bread.
Cut this diagonally, because, duh.
Save the mayo and make the sandwiches again later in the week! If you don’t plan on this, half the recipe and just use a small garlic clove.
Serve with BBQ kettle chips or whatever side you feel excited about.
