Miso Salmon + Sushi Rice

I like making fish at least once a week, but I’m always looking for variety when it comes to these recipes. That said, I tend to prefer an Asian-style salmon because I think the flavors work well together. And I’ll be honest, I mostly love this salmon dish because of the built-in sushi rice on the side, but the miso glaze is really delicious too.

BA’s Miso Glazed Salmon + Sushi Rice + Broccoli

Bentley’s Way

  • I love that this recipe is already portioned for two people. You could easily make some extra rice for another dish later in the week when you do this because it reheats so well.

  • I serve this with some broccoli on the side because I like to have a green vegetable with dinner. My recipe is below!

  • The salmon will need to cook longer than instructed. I follow the cooking directions, then continue cooking on low skin-side down until it comes to temp.

Basic Roasted Broccoli

  • Broccoli, cut into florets (enough for two people)

  • Olive oil

  • Kosher salt

  • Freshly ground black pepper

How to make it

  1. Preheat the oven to 375 degrees Fahrenheit.

  2. Cover a sheet pan in foil and add your broccoli florets. Drizzle enough olive oil all over to make sure every piece is coated. Season with salt and pepper the same way and toss to coat with tongs. Careful not to rip the foil!

  3. Roast at temp for 15-20 minutes, until spots are browned and the broccoli is tender. Turn the oven off and leave in there until you’re ready for dinner.
